Whole Orange Cake - Gluten Free and Dairy Free

This cake is such a delightful surprise as it’s so moist and sweet despite it being gluten free and dairy free. I encourage you to reduce the amount of sugar to 1/2 cup and substitute other natural sweeteners such as coconut sugar, honey, or maple syrup. I suggest using organic oranges as you are boiling them and using the entire orange in this recipe. No need to consume pesticides that may have been used on conventional oranges.

This cake is a knock-out for a birthday cake or a summer treat amongst friends. A good take-along to a potluck or bbq too. Serve with a spoonful of seasonal berries on the side.
